Meat Pies Recipe

Meat Pie Recipe is another popular snack.  Variations can be found in Caribbean /Jamaican cuisine (called a beef pattie) as well as in Indian food.

Ingredients:

Flour     2 cups
Eggs      2
Salt     1/2 teaspoon
Butter    1/4 pound
Water    1/2 cup
Egg yolk     1
ground beef     5 oz (~1/2 cup)
Potatoes       1 medium-size
Carrots        1 medium size
Peas             1/4 cup
Onions       1/2 small size
Spices (e.g paprika pepper or curry)
Directions:
  1. Combine the flour, butter, eggs, water and salt together.
  2. Knead the dough.
  3. Cover the dough and let it rest for 3 hours in a warm place.
  4. Peel the potatoes and dice into little cubes about .5 inch or 1 centimeter length.
  5. Rinse several times and boil with little water till soft.  This should take ~10 minutes.
  6. Chop the onions and place in a small-sized saucepan.  Add the ground beef and brown it till almost cooked.
  7. Add the cooked potatoes, chopped carrots and peas, with very little water to the ground beef mixture.
  8. Preheat the oven to 400 degrees.
  9. Roll out some dough but make sure it is not too thick.
  10. Cut the dough into a circle using a measuring cup or a cookie cutter.
  11. For each ‘circle’, add a few teaspoons of the mixture in the middle of the circle, then fold the circle over, and use a fork to press the ends together.
  12. Repeat the above steps until you are out of dough, or mixture.
  13. Brush the exterior of all the meat pies with egg yolk.
  14. Place the meat pies on a sheet with some spacing between each pie, and bake until slightly brown for about 30 minutes.

 

Fried Dough, chin-chin

Chin-chin, a popular Nigerian snack is extremely easy to make and kids love it! it is not nutritional but still an enjoyable treat if eaten in moderation.

Ingredients:

Flour                                                        3 cups
Butter                                                       1 cup
Eggs                                                         2
Baking powder                                     1 teaspoon
Water                                                      1/2 cup
Milk                                                         1/2 cup
Sugar                                                       5 tablespoons
Vegetable oil                                         for deep frying

 Directions:

  1. Mix all the ingredients together in a mixing bowl, except the vegetable oil.
  2. Knead the dough with the bottom of your palm until it is smooth.
  3. Place some flour on a cutting board or other flat surface to prevent the dough from sticking to the board.
  4. Place some dough on the cutting board and flatten it until it is about ½ inch thick (1¼ cm)
  5. Cut the dough into little squares, each square about ½ inch by ½ inch (1¼ cm by 1¼ cm).
  6. Place some oil on the stove on medium heat, and allow the oil to heat up.
  7. Once the oil is hot, place a few handfuls of the cut pieces into the oil. The oil may appear to foam, which is due to the quality and type of oil you are using.
  8. Allow the chin-chin to deep fry until brown. Some people prefer it light brown, and others dark brown.
  9. Place the fried pieces on a napkin to soak up the extra oil.

Sausage Rolls

Sausage rolls is another very common snack found in most parts of the country.  You can also find packaged sausage rolls sold under common brands like gala, meaty and beefy.

Ingredients:

Flour                                                                                 3 cups

Eggs                                                                                  2

Salt                                                                                    1/2 tablespoon
Butter                                                                                1/4 pound
Water                                                                                1/2 cup
Egg yolk                                                                           1
Sausages                                                                          1 piece  /roll

 Directions:

  1. Combine the flour, butter, eggs, water and salt in a mixing bowl.
  2. Knead the dough.
  3. Cover the dough and let it rest for about 2 hours in a warm place.
  4. Cook the sausage in a small skillet don’t let it get too brown. You can add additional spices to it based on your taste.
  5. Preheat the oven to 400 degrees.
  6. Roll out some dough but make sure it is not too thick.
  7. Cut rectangular strips of the dough, about 3 inches (8 centimeters) wide.
  8. Put a piece of sausage at the end of the dough strip.
  9. Roll the dough around the sausage until it is completely covered, and cut that portion off the strip.
  10. Repeat the last two steps until you are done with this dough strip.
  11. Repeat the last 5 steps until the dough or sausage is finished.
  12. Repeat the above steps until you are out of dough, or mixture.
  13. Brush the exterior of all the sausage rolls egg yolk. This gives the sausage rolls a nice glaze once it is finished.
  14. Place the sausage rolls on a sheet with a little space in-between each one, and bake until slightly brown.  This should take about 30 minutes.
